In fact, high quality is the number one item at Heimbs. The task of the architects was to convey this approach to the outside in a visual way as well, by creating the sort of atmosphere that prevails in coffee growing countries. High-quality materials are effectively presented in the café: Gently shimmering, bronze-coloured metal fabric is applied in waves along the ceiling to evoke the setting sun. An elegant curtain of textile threads demarcates the sides of the room, while furniture with cream-coloured leather upholstery stands out from the parquet floor of heat-treated wood, the dark green shade of which symbolises the link to the earth. Like the coffee bean, this wood has been improved through exposure to heat. But, without doubt, the particularly eye-catching feature is provided by panes of glass with coffee beans enclosed within the cavity. They line the entire front of the monolithic sales counter and create a direct reference to the product in question, namely the coffee bean.

The classic principle of the bean dispenser chute provided the inspiration for this original design element that was developed in cooperation with OKALUX. The coffee beans are spread onto a bed of silicone, thereby guaranteeing an even arrangement of the material within the window cavity. A U-profile in the edge seal ensures that the system is air-tight. Colour-changing LEDs in red, orange and yellow provide backlighting for the coffee beans with diffuse light, based on the roasting process.

The successful combination of materials in the Heimbs Café creates an inviting atmosphere for customers to come in and spend time sampling the products. This goes to show what sort of individual and, above all, attractive design possibilities are offered by placing items in the cavity between panes of glass.

Anything but “cold coffee”!

In contrast with iced coffee, the taste remains stable in the cold extraction process. Bitter substances are not dissolved and the individual nuances of the coffee, from fruity to nutty, can be brought out wonderfully.

Coffee tip

For this method, we recommend fruity coffees, for example Dallmayr Grand Cru Yirgacheffe or Heimbs Pure Origins Yirgacheffe.

Special recipes

Enjoy the cold brew in a variety of ways, e.g. with fruity caramel, tonic water, a squeeze of lemon, cold milk, coconut milk, vanilla ice cream or simply just with ice cubes.

• A large French press pot (1 litre)
• 100 g fresh, coarsely ground coffee
• 1 litre of lukewarm water (approx. 30°C)

What to do

Put ground coffee in the pot and pour the water slowly over it. Then stir well.

Put the lid on the pot and press the plunger gently, so that the ground coffee is kept under water.

Steep for approx. 17 to 24 hours at room temperature. Then press the plunger slowly downwards.

Decant the coffee into another vessel via a filter (e.g. manual filter). Then chill and enjoy with ice cubes.

Cold brew coffee can be kept in the fridge for several days!

The Chemex method differs from other manual brewing methods due to the much thicker filter. This retains suspended matter and coffee oil, allowing a very clear coffee with a round taste to be produced.

Good to know

In the film classic “From Russia with Love”, James Bond drinks from a Chemex pot, making it famous. The 1941 invention of the chemist Peter J. Schlumbohm can now be found in the Museum of Modern Art in New York as a designer piece.

• A Chemex pot for 6 or 8 cups
• 36 or 45 g fresh, medium fine ground coffee and special Chemex filter paper
• 600 or 800 ml hot water (91-95 °C)

What to do

Fold the filter and place it in the Chemex pot (the 3-layered side towards the spout), rinse out the filter with hot water and then pour away the water.

Put the coffee in the filter and pour 50-100 ml water over it. Then mix the ground coffee with the water in the filter and soak.

After approx. 30 secs, pour the remaining water evenly over the coffee in a circular motion. Keep topping up the water, so that the ground coffee is not dry.

Take the filter out of the pot and enjoy the coffee.

Preparation with a manual filter was standard in Germany until the 1960s, when this was gradually replaced by filter coffee machines. Now the original method of preparing filter coffee is experiencing a revival.

Coffee tip

For preparation with a manual filter, we recommend Dallmayr Grand Cru Gombe Reserve or Heimbs Pure Origins Kigoma.

Good to know

There is often a “backlog” in conventional filters: ground coffee and water are in contact for longer, which means that more bitter substances can be dissolved. Therefore, we recommend the Hario V60 filter which, instead of one or several small holes, has a large opening. This causes the coffee to run faster through the filter – for an optimum variety of aromas. Delicate, floral notes are no longer covered by bitter substances.

• 0.5 l coffee pot, filter and filter paper
• 30 g fresh, medium-fine ground coffee
• 500 ml hot water (91-95 °C)

What to do

Put the filter paper in the filter and place it on the pot.

Pour plenty of hot water through the filter paper and pre-heat the pot. Then pour the water away.

Put the coffee in the filter and pour 50-100 ml water over it. Then mix the ground coffee with the water in the filter and soak.

After approx. 30 secs, pour the remaining water evenly over the coffee in a circular motion. Keep topping up the water, so that the coffee is not dry.

French press. Freshly pressed.

A special coffee emerges as a result of several minutes of contact between the water and the ground coffee and the coarse structure of the filter which frequently allows through more sediment and oil than other filtering methods. Full-bodied and strong – for an intense taste experience.

Coffee tip

For preparation in a French press, we recommend Dallmayr Grand Cru Supremo or Heimbs Pure Origins Los Andes.

Good to know

Vary the brewing time – and the coffee will taste different. Darker roasts and a coarser grinding level go well with this brewing method.

• 0.75 l French press coffee pot
• 45 g fresh, coarsely ground coffee
• 750 ml hot water (90-94°C)

What to do

Pre-heat the French press pot with hot water, pour away the water and dry the pot.

Put ground coffee in the pot, pour in 50-100 ml water and stir slowly, soak for approx. 30-40 sec.

Add the rest of the water and stir. Put the lid on the pot and press the plunger gently, so that the ground coffee is kept under water.

After 4 minutes, press the plunger slowly downwards.

Important: So that the coffee does not get bitter, pour out at once or decant into another, pre-heated pot.
