K affeetrinker können sich auf Qualitätsmarken weitgehend verlassen: Zwei Drittel der gängigen Edelkaffees schnitten nach Vergleich der Stiftung Warentest mit „gut“ ab. Von 31 getesteten Sorten er hielten nur drei die Note „mangelhaft“, da sie sowohl bei der Zubereitung in der Kanne als auch in der Kaffeemaschine „modrig-muffig“ schmeckten. Zwei Bio- und Fairtrade-Kaffees wurden mit „ausreichend“ bewertet, da sie bei Kannen-Zubereitung nach „feuchter Pappe“ schmeckten. Die Schadstoffbelastung ist überwiegend gering.

Kaffee: Discountprodukt und Mittelklasse gleichauf

In Deutschland wurden im vergangenen Jahr 400.000 Tonnen Röstkaffee verkauft. Der durchschnittliche Pro-Kopf-Verbrauch stieg gegenüber 2007 um zwei auf 148 Liter. Stiftung Warentest schickte sieben Kaffeeprüfer los, die Aussehen, Geruch, Geschmack, Mundgefühl und Nachgeschmack systematisch beschrieben. Geprüft wurden die Sorten sowohl nach Aufguss in der Kanne als auch in der Maschine.

Die Tester kamen zu dem Schluss: Die mit „gut“ bewerteten Röstkaffees weisen nur geringe Unterschiede auf - von den etablierten Marken über die preisgünstige Discounterware bis zu den Handelsmarken oder den Bio- und Transferkaffees. Egal ob das Pfund Kaffee 2,49 Euro oder 5,30 kostet: Die Qualitätskaffees haben ein kräftiges Aroma, eine deutliche Röstnote, schmecken deutlich säuerlich und bitter.

Es gibt sozusagen einen Einheitsröstkaffee, der dem populären Geschmack entspricht“, sagte Hubertus Primus von der Stiftung Warentest. Wer den Einheitsgeschmack nicht möge, sollte teurere Spezialröstungen bestimmter Herkünfte und Sorten probieren, riet er.

Die Arbeiter in Veracruz in Mexiko können sich den Kaffee kaum leisten: Trotz steigender Preise für den Endverbraucher werden die Löhne nicht erhöht. Schuld seien die internationalen Konzerne.

Gesundheitlich sind Verbraucher laut Stiftung Warentest mit den meisten getesteten Kaffees auf der sicheren Seite. Nur vier Sorten lagen über dem Signalwert für das nervenschädigende Acrylamid. Bei zweien überstieg der Acrylamid-Gehalt sogar den höheren Beobachtungswert.

Der im Tierversuch krebserregende flüchtige Aromastoff Furan stellte ebenfalls ein geringes Problem dar. 24 Kaffees im Test schnitten auch hinsichtlich des Furangehalts im Aufguss mit „gut“ ab; kein Kaffee war schlechter als „befriedigend“. Röstkaffee ist die größte Zufuhrquelle für Furan. Alle Kaffees blieben weit unter der gesetzlichen Höchstmenge für Schimmelpilzgift.

Stiftung Warentest kritisierte, dass sich lediglich ein kleiner Anteil der Kaffeebranche um sozial und ökologisch verantwortungsvolle Herstellung kümmert. Für Kaffees, die sogleich sensorisch „gut“, weitgehend schadstofffrei sowie sozial- und umweltverträglich hergestellt sind, müssen Verbraucher zwischen vier Euro und 5,70 Euro für das Pfund bezahlen. Nur vier Sorten wurden in allen drei Kategorien als „gut“ bewertet.
