About Kaffa
Kaffa, the south western region of Ethiopia where coffee was born.
Markos founded Kaffa coffee in London's Camden canal market in 2004. Four years later his hunt for coffee lovers drew him to Gillett square, Dalston, in the cultural heart of east London. Since then Kaffa coffee has happily served the local communities the finest coffee through sunshine and rain, day and night.

Kaffa, the birth-place of coffee. Around the 15th Century the practice of drinking coffee was first recorded in the south western region of Ethiopia.
Markos, founder, owner and purveyor of Kaffa coffee grows the finest wild coffee beans on his land in Jemma within the Kaffa zone. When we say 'wild', we mean that the coffee occurs naturally on this land. It has been supported through centuries of farming so that the naturally integrity of the indigenous beans is preserved.
After the beans have been allowed to grow in the most natural environment to their true potential, they are harvested and packed. Markos ships the beans into the heart of Dalston, London where his own custom built coffee roaster hungrily awaits the beans.
Markos carefully medium roasts the beans to perfection using ancient ethiopian methods. This is all done on site at the coffee shop just behind Markos's Gaggia coffee machine that he will use to prepare this most unique coffee for you.
Markos knows that only coffee from the Kaffa region and prepared with these technique will deliver what he believes to be real coffee.

Not only can you come to Kaffa for the coffee but you can also enjoy some of the most fantastic ethiopian food available in East London.
Injera is the traditional pancake style bread. Kaffa bakes its own Injera using their own family recipe.
Wat are the various stews which are served on the Injera. You tear the Injera into pieces that you use to eat the Wat ingredients.
Weekly & Special events
Kaffa food is available weekly but new recipes appear during special events at the Gillett square.
Any Thursday or Friday that you visit Kaffa you can enjoy a combination of Kaffa Injera bread and a variety of Vegetarian stews.
If you visit during special event in the square, a concert or cinema date, come and see what special Kaffa recipes are being served. There will be the traditional vegetarians stews but also meat dishes and unusual combinations that will be as exciting as they are delicious.
Kaffa's vegetarian Injera and Wat combination, available every Thursday and Friday. Various lentil, black & green beans stews. Quinoa salads with special croutons, Home made cheeses and other delicious preparations are all part of this exciting Kaffa dish.

I’ll admit it: I enjoy the sweeter things in life. If given the choice between savory or sweet, I’m almost always going to reach for the sweets, though at times I do want to have my cake and eat it too. Fortunately, this predilection has brought me to a most wonderful tradition, known in Germany as kaffee und kuchen (“coffee and cake”).
Kaffee und kuchen is also referred to as a zwischenmahlzeit, or a meal between meals (similar to the British tradition of Teatime), and is really an excuse to get together in the afternoon. The “official” kaffee und kuchen time is 4:00 p.m., when Germans might pause to enjoy some treats, gossip, catch up or spend a leisurely afternoon moment with friends, family or guests.
I may be stretching it a bit when I call kaffee und kuchen a tradition, as it seems to be a dying one in Germany’s modern times. It’s hard these days to find people willing or able to make time for this old form of entertainment, and if so, then it’s most likely on a Sunday afternoon, when everything is essentially closed. That said, everyone is still aware that this pastime once existed, and every so often I find the younger folk sharing a kaffee und kuchen afternoon with their friends, simply on account of its kitsch value.
What makes this tradition so beautiful and so accessible is Germany’s endless line of bakeries and cafes. Most of them are bound to have some type of kuchen, and given such a wide variance of quality and type, those browsing the full selection of cakes, tarts and pies must know exactly where to go for the right dessert. Those who just want to enjoy something sweet with a nice cup of coffee can pop into almost any café or bakery and be on their way to a great afternoon.
If you are averse to heavy cream, butter, fat and loads of sugar, then sadly this isn’t a tradition for you. German cakes are no joke when it comes to making sure every possibly unhealthy ingredient is used, and that’s why I’m in love with them. Many cakes you’ll find filled with pure butter cream. Others are topped with all sorts of fresh fruits. Yet others are crowned with a half-foot mountain of pure chocolate with sugary frosting, and of course there are cakes baked with alcohol, like schnapps or rum. I wouldn’t necessarily promote consuming every one of these as a daily tradition, but as a lover of sweets I find it necessary to sometimes let go of my health-conscious views and indulge. I also find it necessary to ask for a healthy dose of schlagsahne (fresh whipping cream) to accompany my already sinful slice of life.
Bonn is still home to many wonderful destinations for kaffee und kuchen. I’m partial to Schloss-Café Poppelsdorf, as they have a wonderful selection of cakes and a wonderful outdoor patio. I would also recommend Breuer’s Cafe, which, although a bit on the outskirts of Bonn, houses a huge offering of sweets. Both cafes – along with most cafes here in Bonn – happily serve delicious coffee drinks to accompany these treats, and I am never disappointed in the quality of coffee here in Germany.
Tradition is what brings us together and what keeps us together, and when it comes to German bakeries, tradition is constantly challenging my waistline. The sweet spot of this tradition embodies two things I adore: the chance to indulge in excessive desserts (before dinner of all things) and the chance to spend time with family and friends. Kaffee und kuchen, antiquated as it may be, acknowledges the need to cut a slice out of our busy lives, to designate an afternoon to simply talk, and of course to do this while stuffing our faces with sugary, fat-laden, cream-stuffed wonder.

I’ve become obsessed with teatime recently… not so much the appointed time as the act of taking a breather and enjoying the simple pleasure of coffee and pastry, as you’ve been doing. The corner of my new bedroom will soon house a 2×2′ bar table, two stools, a Japanese tea set, French press, and pastry dish expressly for this purpose! I love sharing a coffee with a friend at the local cafe, but there’s something about having a teatime corner at home that is immensely more appealing.

Es muss nicht immer Kaviar sein

F eiern gehört zum Leben, ist Ausdruck von Freude, von Gemeinschaft, von Teilen. Wir alle brauchen solche Momente in denen wir Erfolge nach harter Arbeit feiern, Wiedersehen, besondere Momente oder einfach das Leben. Die Frage ist einfach wie. Muss es Kaviar sein? Müssen es Rindsfiletspitzen sein? Muss es Lachs sein, damit ein Fest etwas besonderes wird? Für unser Weihnachtsmenu haben wir den Kaviar durch Belugalinsen, die Rindsfiletspitzen durch einen Wollschweinbraten und den Lachs durch Forelle ersetzt. Und was ist passiert? Aus einem himmlisch-dekadenten wurde - ganz einfach - ein himmlisches Weihnachtsessen. Was will man mehr? Und das gesparte Geld haben wir gleich gespendet. Nicht dem Gewissen zuliebe sondern aus echter Überzeugung, so auch helfen zu können.

U nser himmlisches Weihnachtsessen kommt als klassischer 3-Gänger daher: Vorspeise, Hauptgang, Dessert, denn meist essen wir eh schon viel zu viel über die Festtage. Die Rezepte sind allesamt für 8 Personen.

Geräucherte Forelle auf Wildkaffee-Linsen

1 dl Wildkaffee Espresso
2 TL Wildkaffee Balsamico *

Rotes Wildkaffee-Risotto mit Steinpilzen
2,5 dl Randensaft
1 Zimtstange, ca. 4 cm
1 Scheibe Ingwer
100 g Parmesan, frisch gerieben
3 g feines, frisch gemahlenes Wildkaffee-Pulver
2 Tl Wildkaffee-Reduktion "fruitée" **
Fleur de Sel und Valle Maggia-Pfeffer
Rahm und Milch in die Bratpfanne geben, aufkochen und etwas einkochen. Mit der Wildkaffee-Reduktion abschmecken.

1 kleiner starker Wildkaffee-Espresso
1,5 Blatt Gelatine
40 g Vollrohr-Rohzucker (Mascobado)
20 g gemahlene Mandeln
20 g gehackte Mandeln

Wie (un-) gesund ist Kaffee wirklich?


Nach dem Yin-Yang-Konzept bildet die Theorie der fünf Wandlungsphasen eine zweite Grundlage der Traditionellen Chinesischen Medizin (und auch des indischen Ayurveda). Diese Entsprechungsreihen werden mit den Begriffen Metall, Holz, Wasser, Feuer und Erde bezeichnet (5-Elemente-Theorie). Es handelt sich jedoch nicht etwa um «Elemente», sondern um die Beschreibung und Qualifizierung zeitlicher Abläufe und zyklisch dynamischer Strukturen. Mit den Interaktionen der fünf Wandlungsphasen in einem positiven (Erschaffung oder Nährung) oder negativen Zyklus (Schwächung, Schädigung oder Zerstörung) werden alle Veränderungen und Störungen der funktionellen Abläufe im Körper beschrieben.

Nach was schmeckt Terroir eigentlich?




D as Terroir auf die chemischen - und somit nachweisbaren - Komponenten zu reduzieren, scheint uns dem Wunder der Natur nicht gerecht zu werden. Dass Plantagenkaffee wie im oberen Bild unmöglich die Aromenvielfalt eines mitten im Urwald gepflückten Wildkaffees aufweisen kann, ist für uns keine Frage von Marketing oder Wissenschaft sondern pure Evidenz. So wie beim Comté-Käse wissenschaftlich nachgewiesen werden konnte, dass die Blumenzusammensetzung der Weide das Aroma beeinflusst, sind auch wir überzeugt, dass das ganze Ökosystem rund um den Kaffeebaum, die Schmetterlinge, die Vögel, die Affen, die Raubkatzen, die Nachbarsbäume, das Moos, der Nebel, die Käfer, die Regenwürmer, die Pilze und was da sonst noch alles kreucht und fleucht dem Kaffee zu einem unvergleichlichen Aromenreichtum verhilft. Und natürlich hat dann eine grüne Kaffeebohne ein anderes Aromenspektrum als die, die 10 Kilometer weiter westlich, südlich, östlich oder nördlich wächst.

Ethiopia is a highly diverse country in terms of culture, climate and nature. In fact, Ethiopia is part of one of the world’s 35 biodiversity hotspots and is therefore one of the most biodiverse countries of this planet. The few remaining old-growth forests are considered to be particularly valuable because of their natural and cultural treasures. One of these havens is the Kafa Biosphere Reserve in southwest Ethiopia, which is known to be the birthplace of wild Arabica coffee (Coffea arabica). The afromontane cloud forest of Kafa is also home to numerous rare and endangered animal and plant species, which make it a unique place to visit off the usual tourist routes in Ethiopia. Visitors to this region can therefore look forward to experiencing authentic cultures, colourful coffee ceremonies as well as striking landscapes and exciting wildlife.

A landscape planner from Berlin TU University in Germany is studying the potential for tourism in Kafa. This Masters thesis will provide the Biosphere Reserve with a detailed map showing tourist sites and further recommendations for management of tourism. read more
The Kafa Biosphere Initiative submitted the official application to UNESCO's Man and Biosphere Programme. The application proposes over 760,000 hectares to be included in the Reserve. Over 44% of the total reserve area will support sustainable development and over 50% of the area, which is still forested, will be protected.
The Ministry of Science and Technology supports the establishment of a network of biosphere reserves in Ethiopia including Kafa Biosphere Reserve as one of the first. An agreement has been signed between the Ministry, NABU, and the UNESCO Cluster office in Addis Ababa.
