A better everyday one cup at a time
We drink coffee and tea to wake up in the mornings, to stay awake at night or simply because it’s good company. Malin Ljungström, who has been involved in developing the range, has more insights to why we enjoy these steaming drinks so much. “To many, the smell of coffee and tea means well-being and a homey feeling. Since we want to improve people’s everyday, we’re offering products that make it possible for more to experience more feelgood moments at home.”
Cold facts and hot products
Trends travel fast today. In the world of coffee and tea, we pick up interesting habits and quirky behaviors in the blink of an eye. We’re exploring and trying new things. And we want to be able to make as good coffee and tea at home as we’ve tasted in that cozy coffee shop on the corner. “Today it’s cool to be an expert and really skilled at something. I think it gives a sense of satisfaction when we notice that we’re able make things as good as the experts, without expensive and hard-to-find equipment,” says Malin.
Things that make a difference
Malin and her colleagues dug deep into traditional coffee and tea cultures to find out what tools people feel they can’t live without. They talked to specialists, investigated living, eating and drinking habits to get an idea of the most necessary products. “We wanted to develop items that make a difference. A kitchen full of gadgets doesn’t make it easier to make good coffee and tea, so we’ve focused on a few, but carefully selected products,” she states. To secure the right quality and functions, the team cooperated a lot with IKEA Test Lab in Älmhult, Sweden. It’s an IKEA version of a James Bond lab where prototypes are inspected and evaluated. “A couple of the things we checked were that the thermoses can keep fluids really warm for a long time. And that the glass mugs and glass pots are durable and comfortable, even though they look and feel light and airy,” tells Malin.
For all tastes and different wallets
The best way to prepare and drink coffee and tea can cause intense discussions. No matter which ‘team’ you side with, or how you enjoy your cup, you’ll be able to find the things that put an extra flavor to your hot drink in the range. Another good thing is that there’s something for all wallets. “It’s one of our contributions to a better life at home. A way to improve people’s everyday one cup at a time,” says Malin.

Recently I had the opportunity to attend a product demonstration given by Nuova Simonelli at Octane Coffee in Atlanta, GA. Nuova Simonelli had asked 2009 World Barista Champion Gwilym Davies to demonstrate the Victoria Arduino Athena Leva a lever-operated espresso machine. This was seriously cool retro stuff, and I was itching to see a master at work. I learned a lot, and perhaps in a future post I can share more about that demonstration.

The next day, I was given a guided tour of the Atlanta IKEA by Jason and April Dominy, two dear friends that have kindly hosted me several times during my visits to Atlanta. As I was pushing my cart with a few neat toys for my daughters, Jason drops a bag of coffee into the cart. When I asked him what he was doing, he said, “I want you to do a review of it.” Well, ok. Given Jason’s and my preferences for artisan-roasted, roast-dated coffee, I was skeptical, but decided to give it a shot.
Now, you need to understand something. At some point in recent history, back in the late 80’s I think, someone did a phenomenal job at promoting “dark roast” as something truly wonderful. And to this day, we are still finding vast amounts of “dark roast” coffee out there on the shelves. The average American palate has become so used to the flavor profile of dark-roasted coffee, that the only time they think about it is when they drink coffee that ISN’T dark roast.
More to the point, I don’t CARE for dark-roasted coffee. It’s not the flavor profile, or roast profile, I prefer. However, some coffees shine better as a darker-roasted coffee vs. a light-roasted coffee. I believe it is up to the discerning artisan roaster to determine the BEST roast level for a given lot of coffee beans, and if that means a darker roast, then so be it. I’ve tried enough coffees from around the world that I can generally tell very quickly if I am going to like a coffee or not. There are certain things I look for: roast date, bean color, oil on exterior of bean, and uniformity in size. Take a look at these beans:

Dark roast IKEA coffee beans
These beans are pretty dark, but not very oily. That’s a good thing! The more a coffee bean is roasted, the more the oils INSIDE the bean are forced OUTSIDE the bean. This means that the only thing left INSIDE the bean is the organic cellulose framework that once held lots of flavor, but now is only so much burnt plant material. If you see the words “French Roast” or “Italian Roast”, you will likely see oily, very dark beans.
There was no roast date, but I’m not surprised by that. Most chain stores or supermarkets don’t want a roast date, they want an expiration date. More particularly, they want one a year down the road. Fact about coffee: it expires long before a year is up. After the coffee is roasted, if left in whole bean form, and kept out of contact with oxygen, carbon dioxide, sunlight, and moisture, the average coffee’s shelf life is a month, at best. Two weeks is better. This particular coffee has an expiration date of Oct. 15, 2011.
There is one foolproof way to determine a coffee’s freshness, by the way. But it will require you buy the coffee first. I’ll show you a picture of that proof in just a moment.
I opted to use my Clever Coffee Brewer, partly because I love the coffee it makes, but also to give me a benchmark to compare this coffee with others I have made in the past. I use this a lot. I have a few different brewing parameters I use, and some coffees shine better at one than the other. I decided to try two different sets of parameters with this coffee. First, let’s take a look at my brewing setup:

My first brew is a 20g dose of coffee beans, ground medium coarse. I tare my scale to a reading of zero. I also set a timer to 3 minutes. Starting the timer simultaneously, I start pouring 204`F water, measuring the weight of the water, and stop at 100g. I stir the coffee to make sure all of it is evenly saturated. Then I continue pouring until my brew weight measures 340g. I stir again, then place the Clever Brewer’s handy lid on the top to retain heat. Now I wait.
Just before that 3 minute time is up, I remove the lid, and stir the brew vigorously enough to create a mild vortex. By placing the Clever atop my coffee mug WHILE the vortex is still in motion, I assure an even draw-down of the coffee through the grounds. I’m left with a nice, little dome of coffee in the filter.
Now, take a look at the coffee bed just prior to adding water:

Now look at it, just after the initial 100g of water was poured in. See how the coffee is swelling up, just a bit?

The IKEA coffee is BLOOMING!
This is called “bloom”, where carbon dioxide, created inside the bean during roasting, and trapped in the coffee after grinding, is released via contact with the hot water. The gas expands, forcing the coffee bed upwards, creating the bloom effect.
You’ve probably picked up a bag of coffee at the store, and squeezed it, forcing air out the one-way valve, allowing you to smell the coffee’s aroma. That “air” is actually carbon dioxide that is slowly being released by the coffee beans after the roasting process. Chances are, while a puffy bag of coffee may be fresher than one with no puffiness left, there’s no guarantee that coffee is, indeed, fresh. But if that coffee BLOOMS during brewing, it is relatively fresh. Now a coffee just a few days off roast, the bloom is quite dramatic.
So, since I saw blooming, I had hopes in a relatively decent, though dark, cup of coffee.
The dry aroma of the coffee, both whole bean, and ground, was somewhat spicy, with a hint of dark chocolate. I could clearly discern the smoky aroma I associate with dark-roasted coffee, just short of burnt. Meh.
The wet aroma retained that spiciness, with the chocolate intensified. I tasted the coffee, once it had cooled a bit, and learned that, while this coffee isn’t my impression of an exemplary coffee, it was pleasant enough to drink. The smoky flavor was there, but wasn’t standing out too far.
On my next brew, I dosed the coffee at 24g, kept the same grind, but backed the time down to 2 minutes, 30 seconds. I did my normal 100g initial pour, stirred, and then poured to 362g. Finished brewing just like the previous brew. This approach to this coffee had very similar attributes to the first attempt, but was a bit smoother. More milk chocolate mixed in with the dark chocolate. Not bad at all.
I generally drink coffee black, no sugar, for tasting or reviewing purposes. This is the best way to really understand the character of a coffee. However, I do prefer, when drinking for pleasure, to add a little sugar to enhance the natural sweetness of the coffee. Not much, but a little. I added some sugar to the second brew, and was treated to a very mellow, almost creamy, coffee. And I hadn’t put any milk or cream in it!
Oh, one other thing. I always encourage coffee and food pairings, as I contend that proper coffee is culinary in nature. So of course, I paired this one.

I’ve long been impressed by the quality of Ikea coffee. For the money there’s not much that can beat it in my opinion. The only problem is that it involves a trip to Ikea, and I would generally rather have my head slammed inside a car door than set foot inside on of those places.
I have spent my entire life trying to like coffee! I found the coffee served in a bed and breakfast in Carinthia, Austria, decades ago, was fabulous but cannot get it anywhere else. I’m now in the U.S. Recently I was in Ikea and bought this coffee. Halleluja, it is the best one for me….I just love it.

It's very easy when reviewing anything IKEA to harp on about flat packs and chipboard, and to be honest I was expecting the contents of this packet to be the crumbled up chipboard corners of all those returned PAX wardrobes with damaged doors. Especially as this coffee is cheap. I mean sub £2 a pack. So this is going to be as depressing as a wet thursday night trawling round 10 hectares of warehouse only to buy a set of tea lights. But hang on just a tiny moment! When you open this one up you can tell immediately it's not going to be that bad. In fact, it's not bad at all. it's bloody great! We've had far worse coffee from so-called professional roasters. Maybe this pack was just super-fresh which gave it an unfair advantage. Who knows. It's dark and strong, the beans are not over roasted and burnt like some dark roasts, and it's a doddle to make. 4 spoons, 5 spoons, 6 spoons. they've all come out pretty consistently. So if you're a coffee novice, and a bit of a cheapskate, get down there and pick yourself up a few for the cupboard. And, get this, you don't even need to go in the shop! They sell them out by the fast food counter so you can nip in for the kill and be out in seconds without having to lower yourself to fight you way past a line of punters buying ten thousand component kitchen parts. Result! It's a whopping 8/10 from Judge Nooge.

IKEA announced they are going ‘all in’ with sustainable coffee as they launch a coffee range that is both UTZ certified and EU Organic certified this month. The new range is called PÅTÅR and is a series of five different coffee products which will be sold in their Swedish Food Market. IKEA has been selling UTZ certified coffee since 2008, and by adding the Organic certification, they are taking the next step in sustainable coffee.
”The IKEA commitment to UTZ certified and Organic coffee is an inspiring example of how different certification schemes can complement and support each other and jointly strengthen a company’s road towards sustainability,” Han de Groot, Executive Director of UTZ, said of the new initiative.
One coffee range with a big impact
Jacqueline Macalister, Health & Sustainability Manager at IKEA Food Services, shares the brand’s excitement for the launch;
“I’m really happy we can now offer our customers this combination of UTZ and Organic throughout our coffee range,” she said. “Sourcing UTZ certified and organic coffee is part of the IKEA efforts to ensure food ingredients are from responsible and more sustainable sources, produced under good labour conditions for farmers and workers while protecting the environment.”

IKEA is a name in home furnishing and Swedish food across the world, and with 390 stores and 650 million customers enjoying the IKEA food offer every year, their actions make a global impact. The PÅTÅR coffee range features 250 gram bags of their signature coffee blend and two varieties of espresso blends. It also includes two 500 gram bags of filter coffee blends in medium and dark roast.

More and more consumers are interested in the origin of the food they buy, creating a great opportunity for brands to build trust and loyalty by sharing their sustainable sourcing stories. But how can brands communicate on sustainability in a meaningful and engaging way?

IKEA’s new coffee range, PÅTÅR
IKEA’s new coffee range, PÅTÅR, is a great example. The product is both UTZ certified and organic and was launched with a series of films and communications pieces to inspire IKEA customers and colleagues on the benefits of sustainable coffee. We caught up with Vera Mertes, Corporate Communications Specialist at IKEA Food Services and her colleague Ulrika Hvistendahl, Sustainability Communicator at IKEA Group to find out more.
Growing consumer interest
IKEA has been working with UTZ since 2008 on sustainable coffee sourcing and its new range is now organically produced too. The company has seen growing consumer interest in sustainability, particularly in relation to food products, as Vera explains.
Increasingly, our customers are interested in where their food comes from. They want to know it has been responsibly and sustainably sourced.
“Food is very personal and emotional. We all want to know that the food we put in our mouths or share with family and friends is of good quality, nutritious and healthy. Increasingly, our customers are interested in where their food comes from too. More and more customers want to know it has been responsibly and sustainably sourced.”
Authentic stories
To engage consumers and colleagues the communications campaign for PÅTÅR tells the story of IKEA coffee from cherry to cup. The team visited Peru, to see first hand what’s involved in coffee production and the benefits of sustainable farming practices. The result is an inspiring film, featuring one of the farmers the team met during the visit. UTZ representative in Peru, Patricia Quijndria, explains why UTZ and Organic certification are a good combination.
“Sustainable farming practices are an abstract concept, explains Ulrika. “We needed to show what it really means in practice for people working in the industry. By telling those authentic stories in an honest way, consumers can see for themselves how much difference sustainable sourcing can make”.
The team produced many different materials, a co-worker engagement pack, a film to be shared with both customers and colleagues, facts for IKEA co-workers for the IKEA markets and features for the IKEA intranet site and customer magazine.

Going back to the source
By taking the trip to Peru, the communications team were able to see for themselves the benefits of UTZ and EU organic certification. They talked directly to farmers and learned about the benefits of certification from better pest control, to increased incomes and the importance of being able to send their children to school.
“We learnt so much from the trip, says Vera. “The Andes is really a very unique and special environment that needs protection. Understanding how much work goes into coffee production, growing the plants, taking care of the land in the right way, picking the coffee cherries at the right time by hand – it really gives you extra respect for the cup of coffee you drink each morning. Getting this insight firsthand enabled us to tell an authentic story.”
An integrated approach to communicating sustainability
