The traditional way of processing coffee is to allow freshly handpicked beans to be laid out to dry in the sun. After up to two weeks of drying, the outer shells turn dark brown and brittle.

The beans are pounded by hand to remove the dried husks. They are then kept in a warehouse for at least a year to allow time for maturing.

At Kopi Bali’s Denpasar factory the aged Bali beans are meticulously sorted by hand and graded before roasting to exacting specifications to produce a natural mocha taste. No artificial flavours or chemical processes are used.

There are normally two ways to pick coffee. The first being mechanically (often large multinationals) that produces bitter coffee because it does not distinguish between ripe and unripe fruits. Then comes the traditional method in which they are gathered by hand. Coffee Luwak adds a third method of “picking” quite natural, by the civet (animal) who will choose the best cherries of the coffee tree.

After collecting and cleaning the grain harvested in mini clusters, Kopi Luwak coffee is sun dried in the Indonesian sun. The grains are subsequently crushed and under the effect of a wooden mortar, green beans appear by shedding their protective shell.

These grains are dipped again in a basin of water where the natural selection operates: good grains sink to the bottom while the others remain on the surface. The floating grains are then discarded. This procedure is repeated three times to clean the grains and remove the remaining shells. So far, no mechanized operation. Everything is done methodically carefully by hand, grain by grain.

Then we proceed to the roasting ,Take note that no bacteria can survive a roasting over 220º C. After cooling, we turn to the so-called stabilization step there stand freshly roasted at least for 24 hours. The drying time is important because it allows the coffee to develop all its organoleptic characteristics.

Basically, the civets ate the berries and marked their territory with the excrements but the men noticed that the beans were fermented and came out whole, the civet digesting only the pulp. Kopi Luwak

Just found a great place to try the civet cat coffee known locally as Kopi Luwak. The place is a small spice, coffee and cocoa farm called Sailand, and is about halof way back to Ubud from Kintamani (I'm trying to find their card and will post when I find it). The civet cats (they have 2 there to show you) apparently eat only the sweetest wild coffee berries and their stomach enzymes help to break down the bitterness of the coffee bean. Farmers collect the digested beans from the cat dung and sell it to Sailand. I was surprised to find a source on Bali as I thought it all came from Sumatra and Java, but apparently there are enough civets in the Munduk area to supply the farmers. It only cost about $2 to try a cup or $40 for 400g, which is cheaper than most places I've seen, but it was great to see the process as they roasted the beans (I could do without viewing the picking process). Well worth a visit but keep in mind since the crop is apparently seasonal, so are the beans.

We tried it at Bali Orchard Garden. An interesting experience!

You can also drink this coffee at Kopi Bali on the Sanur By-pass road - not as far to travel! I think you can sample it at many of the spice/coffee farms on the road to Kintamani, not only the one mentioned above.

What are the prices like at Bali Orchard Garden and Kopi Bali? These would probably be more convenient if the prices are the same or close. Do these places have any of the cats to see?

We tried it a Kopi Bali on Jl Bypass near Sanur. Nice packaging (you can keep the coffee package) and neat experience.

But the coffee tasted ordinary to us! The price was 200,000 rp/pot.

The Bali Orchid Gardens do have a civet cat that you can see on site but I can't remember how much the coffee is to taste, I'm sorry!

    How our Kopi Luwak is processed.

    In the early morning hours, members of the local B’laan tribe search for the droppings of the Civets. Once they have collected them, they pass them on to us, and we process them at our coffee farm. First, we carefully wash the beans, and then remove the outer layer of the coffee cherries; this ensures all bacteria is removed. Next, our beans are sun-dried for about three days, until they reach the perfect dryness.

    Once they have dried sufficiency the Kopi Luwak beans are sorted, with any incomplete beans removed and discarded, thus ensuring only the very best beans are used in the roasting process. Our beans are roasted to a medium degree, as we have found a medium roast (City Roast) both guarantees the highest possible quality and nurtures the natural taste of the coffee.

    This is a really interesting product and there seems to be a lot of confusion regarding this type of coffee. Some companies do abuse their civets and that is awful, as an animal lover and someone who doesn’t consume animal products, I would NEVER support a product or company that comes from harming an animal. This coffee is sourced from the droppings of wild civets and while that may seem unappetizing to some, its not cruel by any means. This is an expensive, high quality product and its obvious the minute you open the bag. The beans smell amazing and my kitchen smelled great just from me grinding a few beans in my grinder.
