Das CAFÈ KOGI Projekt

Ein Indianerstamm, die Kogis, haben sich zur Aufgabe gemacht den Menschen zu zeigen, wie man mit der Welt umgehen sollte. In ihrem Projekt Café Kogi bauen sie Kaffee nachhaltig in den Bergen Kolumbiens an. Dabei spielt nicht nur die Ernte eine Rolle, sondern auch ihre Lebensweise und das Gleichgewicht der Natur.

Im Norden Kolumbiens leben rund 18.000 Kogi-Indianer, die bis vor kurzem noch abgeschottet von der Zivilisation verbracht haben. Ihre Denk- und Lebensweisen sind so anders, so dass jeder, der mit ihnen arbeiten möchte, mindestens eine Woche bei ihnen in der Sierra Nevada verbringen muss.

Die Kogi sind Nachfahren der Tairona, einer uralten südamerikanischen Kultur. Genau ist nicht bekannt, woher dieses Volk kam. Jedoch lebten sie bereits ab dem 2. Jahrhundert vor Null im Norden Kolumbiens. Schon immer sah sich das Volk als Hüter der Erde – in Ritualen und Gebeten haben sie sich um das Gleichgewicht zwischen Geben und Nehmen in der Welt gesorgt. Für sie ist vor allem die Verbindung zwischen den Gletschern auf den Bergen und die Flussmündungen im Meer heilig. Denn für sie ist die Natur ein Kreislauf, der sich gegenseitig bedingt: Die Berge ernähren das Meer, dies schafft den Regen, welcher zu neuem Schnee werden kann. Wenn es also eine Disharmonie in diesem Kreislauf gibt, so verdorren die Berge und das Meer kann nicht mehr genährt werden.

Nachdem der Indianerstamm eine Botschaft ihrer Gottheit bekamen, zogen sie wieder in die unteren Ebenen der Berge in Kolumbien. Die Botschaft beinhaltete, dass sie aus den Kaffeebäumen, welche auf den unteren Ebenen an den Bergen stehen, Kaffee schaffen sollten. Dieser Kaffee geht dann um die ganze Welt und so verbreitet sich auch die Botschaft der Kogi um die ganze Welt – eine Verbindung für ein umweltfreundlicheres Handeln also.

Die Kogi verstanden schnell und begannen mit dem Anbau. Es ist aber keine gewöhnliche landwirtschaftliche Produktion – ganz im Gegenteil. Der Rohkaffee wird in Höhen von 800 bis 1.700 Metern angebaut und etwas 1.600 Familien haben diese Kaffeebäume auf ihrem Land. Jede Familie erntet nur wenige Säcke, aber gemeinsam verbindet sie die gesamte Produktion. Der Anbau erfolgt dabei nach vier Prinzipien:

1. Im Einklang der Natur: Nach dem Gesetz des Ursprungs “Ley de Sé” wächst der Kaffee mitten im Wald in Gemeinschaft mit allen Bäumen. Die Aufrechterhaltung und die Heilung der Natur ist hierbei das wichtigste Gesetz des Stammes.
2. Alte Sorten: Die verwilderten Kaffeepflanzen, welche die Kogi in den unteren Ebenen fanden, achten sie als von den spirituellen Vätern geschenkt. Deshalb bauen sie nur die alten Sorten an und geben dabei Acht auf den Umgang mit der Natur und der optimalen Ausnutzung. So ist es für sie nur eine Frage des Gleichgewichts.
3. Spiritualität und Qualität: Für die Kogi ist der Anbau und alle damit verbundenen Tätigkeiten von Kaffee eine spirituelle Handlung. Mit Ritualen und Opfern versuchen sie mit Hilfe der geistigen Ebene ein Gleichgewicht herzustellen. So ist jeder Schritt untrennbar von spirituellen Denken und wird mit Bedacht ausgeführt.
4. Kontrolle und Partnerschaft: Jedes Tal in den Bergen ist sozusagen ein eigener Bezirk und darf selbst entscheiden, ob es sich dem Projekt anschließen möchte. Zudem werden alle Produktionsschritte von einer indigenen Organisation kontrolliert. Überall steht das Prinzip Zhigoneshi, das Prinzip der gegenseitigen Hilfe, der allem, wodurch ein harmonisches Miteinander geschaffen wird.

Bereits jedes Kind der Kogi erlernt den Umgang mit den Kaffeebäumen. Der Kaffee reist dann rund um die Welt und durch den Kauf kann man dazu beitragen, dass sich diese einzigartige Kultur selbst erhalten kann. Vielleicht soll es auch ein Denkanstoß an uns sein, so dass sich die Weisheit der Kogis bei uns verbreiten und eine nachhaltige Art der Landwirtschaft sich entwickeln kann. Neue Microlots* von den Schamanen

Ende August erreichte uns der Rohkaffee von sechs Microlots aus dem Süden Kolumbiens. Unsere Partner sind Cafeteros vom indigenen Volk der Nasa. Genau wie bei den Kogi werden von den Schamanen der Nasa verschiedene Rituale für den Kaffee über das Jahr vollzogen. Alte Bäume werden nicht gefällt, junge nicht geschnitten, nur weil es praktischer ist. Diese Kaffees wachsen organisch ohne Dünger und Pestizide im Einklang mit der Natur. Da Urwaldkaffee (noch) nicht bio-zertifiziert ist, haben uunsere Kaffees dennoch zur Zeit kein Bio-Siegel. Mehr zu den Nasa finden Sie hier, zu dem Kaffee hier.

What is Kopi Luwak

Kopi Luwak coffee, also known as “Civet Coffee,” is collected from coffee berry beans which have been digested by the Asian Palm civet in Sumatra. The Asian civet eats the ripest berries for their fleshy pulp which allows the proteolytic enzymes in its stomach to percolate into the beans. This process breaks down the proteins in the green beans creating a unique exotic flavor. Once the Civet expels the coffee beans through its feces our local farmers from Bandar Lampung in Sumatra enter both the wild and our local farm to collect it for processing. We offer Arabica Kopi Luwak which is gathered from the highlands of Sumatra as well as Robusta Kopi Luwak collected from our farm in Indonesia. We carefully sort through the Civet coffee beans which are washed and dried immediately. Each step is meticulously performed to ensure cleanliness and quality before roasting.

Due to the nature of this product the demand is high and supply is low. The rarity of Kopi Luwak dictates the price. Quality is superb and therefore it is known as the rarest and most expensive coffee in the world. The aroma is rich and strong with a hint of chocolate that lingers on the tongue. Steps of Kopi Luwak Coffee

The Asian Luwak which lives in the wild will eat the best coffee berries of a tree. At this point our local farmers in Sumatra will find the best Luwak’s droppings and take them for processing. They will thoroughly clean all luwaks droppings to ensure coffee is ready for roasting. Once the coffee beans have met our standards we will then prepare for roasting. CAFÉ KOGI Urwaldkaffee Espresso Test

Ich habe eine Probe vom “CAFÉ KOGI Urwaldkaffee” bekommen und möchte hier den Espresso testen und vorstellen. Eine Übersicht über meine Espresso Tests findet ihr hier.

Die ganze Story des aus einem Crowdfunding entstandenen Projekts findet ihr auf urwaldkaffee.de. Jetzt geht es weniger um die Herkunft und mehr um den Espresso. Wobei natürlich beides nur zusammen zu denken ist, ich habe aber in vielen Tests viel über die Geschichte und wenig über die Kaffees und Espressos gelesen, deswegen möchte ich das ein wenig ausgleichen.

Der Espresso kommt in einer leuchtenden Packung an. Ich habe ihn jetzt in viele Male in meiner La Pavoni Professional zubereitet. Gemahlen habe ich ihn mit meiner Mazzer Mini.

Aroma und Geschmack

Es handelt sich um einen süßlichen Espresso, der schokoladige Noten hat. Er hat einen guten Körper und ein angenehmes Mundgefühl. Sehr seiden und angenehm. Insgesamt ein ausgesprochen angenehmer und milder Espresso. Ich finde ihn gerade pur hervorragend. Es handelt sich um einen Espresso, den auch Menschen pur gerne trinken, denen sonst Espressos zu kräftig sind.

Auch mit Milch harmoniert der Kogi Espresso sehr gut. Ich habe einige Freunde probieren lassen und die waren alle sehr begeistert. Ich bevorzuge für Getränke mit Milch kräftigere Espressos.

Zubereitung

Der Kogi Espresso ist wirklich einfach zuzubereiten. Er ist mir ab dem ersten Versuch mit einer schönen Crema und einem guten Geschmack gelungen. Ich habe meistens einen doppelten Espresso gezogen mit 16g Kaffeemehl und habe ca. 45 ml extrahiert.

vielen Dank für die Vorstellung auf Ihrer Seite. Da ich aus dem Raum Köln komme, dorthin gefahren und meine Frau probieren lassen. Der Kaffee wurde sofort eingetütet. Tolle Crema im Incanto Vollautomat. Bei Cappuccino sowie Latte macchiato ein feiner Kako-Geschmack… Einfach nur toll…

Habe am Kaffeevollautomat genau die Menge für einen Espresso eingestellt, die dafür vorgesehen ist. 25 ml…

Sind mit unserer Auswahl (Saeco Incanto sowie Kaffee Kogi) sehr zufrieden.
